Curried Lentil Pilaf

3 green onions, sliced             
1 carrot, diced
2 cups water
1/2 cup chopped celery                      
1/4 cup chopped green pepper           
2 tablespoons butter               
1 tablespoon curry powder    
1 pound turkey sausages
10 3/4 oz can of condensed chicken broth
1 cup dried lentils
1/4 teaspoon pepper
1/2 cup rice

Broil or barbeque the turkey sausages until done. Cut into small pieces and put to the side. Cut two onions into thin slices and sauté in frying pan until caramelized. Place with the sausages until later. In medium saucepan, sauté carrots, celery, green pepper and the remaining onion in butter. Add chicken broth and water; bring to a boil. Stir in lentils, curry powder and pepper. Cover; simmer 25 minutes. Add rice; stir well. Cover and simmer an additional 20 minutes until rice is tender and liquid is absorbed. Mix in cooked turkey sausage and caramelized onions. 
Makes 10 (1/2 cup) servings.
