For the Syrup:
1.5 cup sugar
1.5 cup water
One 3 inch long piece of fresh ginger, peeled and sliced
Zest from 4 limes
1) Combine the sugar and water in a saucepan, and bring to a boil, stirring until the sugar is dissolved. Remove the pan from the heat.
2) Stir the ginger and lime zest into the syrup. Cover the pan and let stand for at least 1 hour, or overnight for more intense flavor.
3) Strain syrup mixture into a glass jar or bottle, and keep refrigerated for whenever you need it.
For the Soda:
4.5 oz seltzer
1.5 oz ginger lime syrup
Juice of 1 lime
Combine the ingredients in a glass, and stir with plenty of ice. Feel free to adjust for taste or volume. Garnish with a slice of lime, a slice of ginger, and/or a sprig of mint if you're trying to impress somebody.
