2 medium size zucchinis
1 medium onion
2 cloves of garlic
1 teaspoon curry powder (McCormick)
1 can of chicken broth
1 cup water
1 teaspoon cooking oil
salt and pepper to taste
Slice zucchinis and onion. Finely chop garlic.
Heat oil in pot and add sliced onion. Sauté until they turn soft but not brown. Add garlic, sauté for a few seconds, then add zucchini, chicken broth, and a cup of water. Cook on medium heat until zucchini becomes soft (about 10-15 minutes). Cool the zucchini mixture and puree it in a blender. Return puree to pot and add curry powder and salt and pepper to test. Heat and serve.
*This can also be served cold with dollop of sour cream.
